Provencal Bakery has been baking artisan bread for restaurants, markets, and retail since 1998.
As other lines of baked goods were added, owner Brenda Sabbag pursued a visible retail location and opened Provencal Bakery & Cafe.

Provencal Bakery has been baking artisan bread for restaurants, markets, and retail since 1998. As our reputation for quality bread grew, owner Brenda Sabbag decided to create a welcoming space for our community, opening the Provençal Bakery & Café in Middletown.
The Middletown location is a cozy, dine-in bakery where you can enjoy a variety of freshly baked artisan bread, full breakfast, pastries, salads, soup and sandwiches made to order. Locals recommend our gourmet coffee and teas as well as creative espresso drinks and smoothies. Our daily bread offerings include Baguettes, Sourdough, Whole Wheat, Italian, and Ciabatta. Specialty bread such as Rye, Cranberry Pecan and Whole Grain are made daily.

Whether you're here for a quick breakfast, a leisurely lunch, or to grab a loaf to take home, our friendly staff ensures that every visit is a special one. Relax at the counter with a coffee and the paper, chat with fellow customers, or get some work done with free Wi-Fi. Brenda Sabbag is a skilled baker with deep roots in French artisan bread making, known for her mastery of traditional techniques and her unwavering commitment to quality. Trained in the timeless methods of European baking, Brenda brings a soulful, hands-on approach to every loaf—using slow fermentation, premium ingredients, and a deep respect for the craft.
But what truly sets Brenda apart is her love for her Rhode Island community. She’s driven by a passion to recreate the nostalgic baked goods we all grew up with—those warm, familiar flavors that evoke memories of family kitchens and neighborhood bakeries.
